The students have been researching and cooking different cold larder products such as sausages, preserves, and cured meat, which they will be selling at the market.
UCOL Catering & Hospitality Senior Lecturer Gina Guigou says this as a great opportunity for the students to experience all aspects of cooking and selling food.
“The students aren’t just cooking food; they’re doing the health and safety, they’ve designed the labels for the products, and they’ll be down at the market selling the food and interacting with customers.”
Gina says the course places a big emphasis on students developing their own dishes.
“It’s about giving them the confidence and the opportunity to put their own twist on things.”
Products that will be for sale include:
- Smoked lamb ham sausage.
- Spicy Indian lamb sausage with Chinese pickle.
- Paneer cheese fritters with spicy spinach pesto.
- Salmon teriyaki .
- An antipasto plater including duck prosciutto, lamb pastrami, smoked garlic hummus, and feta cheese pesto.
- Beef jerky.
- Chicken liver pate.
- Smoked feta cheese with a green tea base
The students will be cooking some of the products on the day.
Products will be on sale from 8.30am.
